Every dish is cooked entirely over open fire — no gas, no electricity. Using spit-roasting, ember baking, stone grilling, and salt drying, our chefs draw on ancestral techniques and wild, seasonal ingredients from the Chiltern Hills to serve meals rooted in nature, tradition, and deep, rustic flavour. Cold-pressed juices and seasonal wellness cleanses are available on request. We also operate a bring-your-own-wine policy — you're welcome to pair your meal with something you love.
